Pork Chops and Rice

This is an easy meal to stick in the oven and it's ready in an hour.

Ingredients

  • 6-8 pork chops
  • 1 Tbs. shortening
  • 1 1/2 C. uncooked minute rice
  • 3 C. hot water
  • 1 envelope dry onion soup mix
  • Salt and pepper to taste

Directions

Brown pork chops in shortening; remove from skillet and add water and onion soup mix to drippings. Stir and bring to a boil. Spread rice in bottom of 13x9x2-inch baking pan. Pour water mixture over rice. Place browned pork chops on top or rice. Sprinkle with salt and pepper. Cover with foil. Bake at 350 degrees for 60 minutes.

Yield: 4-6 servings

  • This was very good, I added carrots and bell pepper to my rice. There were no left overs and I snuck veggies into my toddler, I will definitely be using this again.

  • This recipe reminds me of when I was a kid. Mom made a simular dish adding bulgar to the rice. Can't wait to try this one.
