Pork Goulash with Sour Cream

Ingredients
- 1 1/2 lbs. pork, cubed
- salt
- pepper
- 1/4 C. paprika
- 2 Tbs. butter
- 1 lg. onion, chopped
- 1/4 C. flour
- 2/3 C. chicken stock
- 1 1/4 C. mushrooms
- 8 tomatoes, chopped
- 2/3 C. sour cream
Directions
Toss the pork in the seasoning and half the paprika. Brown the meat in butter in a casserole, and remove. Sauté the onion for 5 minutes and remove. Add the flour and remaining paprika and sauté for 3 minutes. Add the stock, stir and bring to a boil. Return the pork and onion to the casserole, add the mushrooms and tomatoes, cover and simmer for 45 minutes. Add the sour cream.
