Pork Loin with Apples and Onions

Ingredients
- 1 center-cut pork loin roast
- 1 Tbs. chopped fresh rosemary
- salt
- pepper
- 2 Tbs. olive oil
- 2 tart apples, peeled and thinly sliced
- 1 sm. onion, thinly sliced
- 1/4 C. brandy
- 1/2 C. dry white wine
Directions
Preheat oven to 350 degrees. Lightly oil a roasting pan. Rub pork with rosemary, salt and pepper to taste, and olive oil. Place the meat fat-side up in the pan and surround it with slices of apples and onions. Pour the brandy and wine over the meat. Roast for 1 hour and 15 minutes. Transfer meat to a cutting board and cover with foil to keep warm.
The apples and onions should be soft. If not, put the pan back in the oven and roast for 15 minutes more. When tender, scrape apples and onions into a blender. Puree until smooth. Slice the meat and arrange it on a heated platter. Spoon the apple-onion puree to one side. Serve hot.
