Pork Roast And Sautéed Peppers

- 1 (3-4 lb.) pork roast, sliced
- ¼ C. olive oil
- 2 yellow bell peppers, diced
- Salt and pepper to taste
- 3 C. vegetable or chicken broth
Preheat oven to 350 degrees. Toss pork roast slices with olive oil, salt, and pepper. Transfer to a greased baking dish, add in bell peppers, and pour in broth. Cover with foil and bake for 3-4 hours until cooked through. Remove foil, increase heat to 450 degrees, and bake for an additional 30 minutes until brown.
