Pork Roast with Potatoes

Ingredients
- 1 3-lb. boneless pork loin roast
- 2 Tbs. chopped fresh rosemary
- 2 Tbs. chopped fresh garlic
- 4 Tbs. olive oil
- salt
- pepper
- 2 lbs. new potatoes, halved
Directions
Preheat the oven to 425 degrees. Oil a large roasting pan. In a small bowl, make a paste with rosemary, garlic, 2 Tbs. oil and salt and pepper to taste. Add potatoes to the pan with remaining 2 Tbs. oil and half of the garlic paste. Push potatoes aside and put the meat fat-side up in the middle of the pan. Rub the remaining paste all over the meat.
Roast for 20 minutes. Turn the potatoes. Reduce the heat to 350 degrees. Roast for 1 more hour, and turn the potatoes every 20 minutes. Transfer meat to a cutting board. Cover loosely with foil and let rest for 10 minutes. The potatoes should be browned and tender. Slice the meat and arrange it on a warm serving plate surrounded by the potatoes. Serve hot.
