Pork with Spicy Peanut Sauce

  • 1/2 C. sesame oil
  • 1/4 C. creamy peanut butter
  • 1/4 C. soy sauce
  • 3 Tbs. sugar
  • 1 Tbs. minced garlic
  • 1 tsp. crushed red pepper
  • 2 Tbs. vegetable oil
  • 1 1/4 lbs. lean pork loin, cut in strips

In a small bowl, combine sesame oil, peanut butter, soy sauce, sugar, garlic and red pepper, mix well. If mixture is too thick, warm in a microwave oven or heat on top of the stove. Blend thoroughly. In large skillet, heat vegetable oil until quite hot. Add pork; cook, stirring often, just until pork is cooked through and juices run clear. Do not overcook. Spoon about half the sauce over the pork; cook 30-60 seconds to heat thoroughly. Serve at once. Pass remaining sauce at the table.
