Portuguese Fava Beans

Serve with one with a nice Chianti.

  • 5 Tbs. olive oil
  • 3 large onions, chopped
  • 2 cloves garlic, minced
  • 2 Tbs. red pepper flakes
  • 1/4 C. tomato sauce
  • 2 C. hot water
  • 3 Tbs. chopped fresh parsley
  • salt to taste
  • 1/2 tsp. black pepper
  • 2 tsp. paprika
  • 2 (19 oz.) cans fava beans, drained

Heat oil in a large saucepan over medium heat. Sauté onion and garlic until golden brown. Stir in red pepper flakes, tomato sauce, hot water, parsley, salt, pepper and paprika. Bring to a boil, reduce heat and simmer for 30 minutes. Gently stir in fava beans. Remove from heat and let stand for several minutes to allow flavors to blend.

Makes 8 servings.
