Portuguese Kale Soup

This vegetable soup recipe has been in my family for so many years and made all kinds ways. I'm just going to give the simplest way!

  • 1-2 C. chopped kale
  • 4-5 potatoes, cut up
  • 1 C. cabbage, chopped
  • 1 can white beans, drained
  • 1 onion, chopped
  • 1 clove garlic, chopped
  • 1 bay leaf
  • 1/2 C. linguica sausage, chopped
  • salt and pepper
  • 1 Tbs. paprika
  • 1 C. elbow macaroni
  • handful parsley chopped
  • 1-2 Tbs. olive oil
  • 1 carton chicken stock

In a soup pot, start with pouring some olive oil on the bottom of the heated pot. Add onions, garlic, salt, pepper, paprika, bay leaf and linguica sausage. Cook for few miutes until onions and everything else is cooked. Pour in the stock and start adding the kale, potatoes, and cabbage. It will start to boil, season again with salt and pepper. When the vegetable are alomost cooked. Add in the macaroni and let it simmer until macaroni is cooked and veggies are too. Then add the parsley and stir it let it simmer more for 1 minute. Season to taste to desired taste, then enjoy the soup hot in a bowl.
