Portuguese Tuna Salad

Refreshing (NOT HEAVY) tuna salad, Growing up in a Portuguese household, this was always a quick and easy dinner mom would prepare quickly and serve often in the summer.

Ingredients

  • 2 cans solid white tuna, drained
  • 1 can chickpeas (garbanzo beans), drained
  • 1/2 onion, finely chopped
  • 1/2 bunch parsley, finely chopped
  • Salt and pepper to taste
  • Oil and vinegar to taste

Directions

Mix all ingriedients together, serve alone or atop a bed of lettuce. This is great as leftovers also once all the flavors have marinated together.
