Potato and Canadian Bacon Chowder

With just 7 ingredients and 35 minutes to spare, you can have homemade soup. The key is a package of au gratin potato mix.

Ingredients

  • 4 C. water
  • 3 C. shredded cabbage
  • 1 C. finely chopped Canadian-style bacon (4-1/2 oz.)
  • 2 large carrots, thinly sliced (1-1/3 C.)
  • 1 5.25- to 5.5-oz. package dry au gratin potato mix
  • 1 C. milk
  • 1 tsp. cornstarch
  • 1 C. frozen cut green beans

Directions

In a 4-qt. Dutch oven or large pot combine the water, cabbage, Canadian-style bacon, carrot, and dry potato mix. Bring to boiling; reduce heat. Simmer, covered, for 15 minutes. Combine the milk and cornstarch; add to soup along with frozen beans. Simmer, covered, for 10 to 15 minutes or until beans are tender.

Makes 4 to 6 main-dish servings.
