Potato and Chickpea Tacos

Ingredients
- 1 med. Yukon Gold potatoes
- 1 can chickpeas
- 2 tsp. chipotle seasoning
- 2 tsp. cumin
- 3 -6 flour or corn tortillas
- 1 Tbs. light olive oil
- Parmesan cheese to taste

Directions
Cube potatoes and place in skillet with olive oil over medium heat . Season potatoes with cumin and chipotle seasonings. Fry potatoes for about 12-15 minutes.
Add the can of chickpeas to the skillet and heat until chickpeas are warm, about 3-4 minutes.
Warm up tortillas and set out cheese and potato and chickpea mixture so that people can prepare their own tacos.
