Potato and Mushroom Casserole

- 5 Pork Chops
- 2 Medium Potatoes, diced or sliced
- 10 mushrooms, sliced
- 7 dried jalapenos
- 1 Small Onion, diced
- 1 Tbs bottled Chopped Garlic
- 1 tbs salt
- 1 tbs pepper
- ¼ cup Water
Place potatoes in a large saucepan. Cover with cool water and bring to a boil. Reduce heat to medium-low and cook until potatoes are fork-tender. Drain and cool.
Preheat oven to 400 degrees. Spray a 13x9-inch baking dish with nonstick cooking spray.
Spread potatoes in the baking dish.
Drop mushrooms, jalapenos, onions, salt and pepper over potatoes.
Place pork chops on top of all ingredients.
Bake for 60 minutes or until bubbly and hot throughout.
Remove from oven. Serve immediately.
