  • 2 C. rigatoni pasta, cooked and drained
  • 1 T. butter
  • 1 onion, chopped
  • ¼ C. red wine
  • 2 C. tomato puree
  • Salt and pepper to taste
  • 3-4 potatoes, peeled and boiled
  • ½ lb. lean ground beef
  • 1 T. dried parsley

In a large skillet, melt butter and sauté onion until translucent. Add beef and brown until cooked through. Pour in wine and tomato puree; season generously with salt and pepper. Let simmer for about 10 minutes to thicken. In a baking dish, combine rigatoni, meat sauce, cubed potatoes, and parsley. Bake at 375 for 20 minutes. Feel free to add cheese if you prefer!
