This potato, bean and broccoli casserole is sure to be a hit! I've been making it every year for my church potluck, and everyone always begs me for the recipe!

  • 1 ½ lb. potatoes, peeled and cubed
  • 1 head broccoli, cut into florets
  • 1 C. milk
  • 2 T. butter
  • Salt and butter to taste
  • 1 C. mozzarella cheese, shredded
  • 1 can red kidney beans, rinsed and drained

Preheat oven to 350 degrees. Boil potatoes in salted water for 10 to 20 minutes until tender. Drain and transfer to a large bowl. Mash and mix in milk, butter, salt, pepper, and mozzarella. Stir in broccoli and beans; spoon into a greased baking dish and bake for 15 minutes.
