Serving Size / Yield
- 1/4 cup mashed potatoes
- 1 tablespoon milk
- 1 teaspoon vanilla
- 16 ounces powdered sugar + more to roll
- 2/3 cup peanut butter
1. In large bowl, mix potatoes, milk, and vanilla.
2. Add sugar and combine to form a dough.
3. Refrigerate at least one hour.
4. Sprinkle sugar on cutting board, and roll dough into rectangular shape.
5. Spread peanut butter on top.
6. Roll into log.
7. Refrigerate one hour and slice in 1/4 inch pieces to serve.
