Potato Candy
Ingredients
- 1 5-6 oz. potato
- 1 box confectioners' sugar
- 1/8 tsp. salt
- 1/4 tsp. vanilla
- 4 oz. coconut
- 6 squares unsweetened chocolate
Directions
Boil the potato, drain and mash it. Add a half of a box of confectioners' sugar and the salt. Add the vanilla and coconut; add as much sugar as needed to make mixture stiff. Shape into balls and chill for 2 hours. Melt the chocolate and dip balls. Let excess drip back in pan and put balls on waxed paper to set.
