Potato Cheese Puffs

These hearty Cheddar puffs will fill you up between meals.

  • 1 C. mashed potatoes
  • 2 eggs, beaten
  • 1/2 C. milk
  • 2 C. shredded Cheddar Cheese (can be made without this)
  • 1/2 C. flour
  • 1/4 tsp. baking powder
  • Salt and pepper to taste
  • Salad oil for frying

Combine ingredients except oil, mix well. Pour about 2" of salad oil into a saucepan or frying pan and heat to about 375 degrees. Drop batter by Tbs. 4 or 5 at a time, into the hot oil. Fry 3 or 4 minutes or until golden brown. Serving immediately.

Makes 24 puffs.
