Potato Crusted Salmon

After a busy day all this potato crusted salmon recipe needs is a crisp green salad to make it a complete meal.

Ingredients

  • 1 lb. salmon, skinned
  • 1 lg. potato, peeled and sliced very thin
  • 6 plum tomatoes, seeded and coarsely chopped
  • 3 cloves garlic, minced
  • 3 Tbs. extra virgin olive oil
  • 2-4 sprigs fresh dill

Directions

Rinse salmon and pat dry. Place one or two sprigs of dill (depending on taste) on one side of salmon. Cover with half the potato slices. Turn and repeat on other side.

Heat two tablespoons of the olive oil over medium heat. Add the prepared salmon and cook approximately 10 minutes per side. Use a large spatula to flip.

While salmon is cooking, saute garlic with remaining olive oil until lightly golden. Add chopped tomatoes.

To serve, place tomatoes on a plate with salmon on top of tomatoes.
