Potato Goulash

This potato goulash recipe was passed on to me from my mother. It was a comfort meal growing up and continues to be one now. My kids ask for this all winter long.

  • 2 cans condensed tomato soup
  • 6 potatoes, peeled and sliced
  • 1 onion, cut into strips
  • 1 1/2 lb. ground beef
  • salt and pepper to taste

Spread 1/2 can of tomato soup on bottom of crock pot. Place one layer of potatoes, a few onion slices and ground beef on top, layering as you go along. Add 1/2 can tomato soup and continue layering the potatoes, onions and ground beef until you run out of ingredients. Top with salt, pepper and remaining tomato soup. Cook in crock pot on low for 6-8 hours.

  • This looks tasty, but before I try it, I need to know: Do you precook and drain the ground beef or dip the grease off the dish later?
