Potato Herb Pie

Cut into wedges, this fresh herb and asiago cheese potato pie is perfect.

  • 10 large red potatoes, scrubbed, unpeeled
  • 4 cloves garlic minced
  • 4 green onions chopped
  • 3 Tbs. fresh minced parsley
  • 1 Tbs. fresh herbs (thyme, rosemary, sage, basil, or oregano)
  • 1 C. asiago cheese
  • 4 tbsp. parmesan cheese
  • 1 C. chicken broth
  • salt and freshly ground pepper

Preheat oven to 350°F. Slice potatoes into 1/8 inch slices. Rub inside of a 12 inch round baking dish with butter. Slightly overlap potato slices in the bottom to form a spiral. Combine asiago cheese, garlic, onion, parsley, salt and pepper in a small bowl. Sprinkle 1/3 of this mixture over the potatoes. Add two more layers of potatoes and cheese. Pour chicken broth over the potatoes. Sprinkle with parmesan cheese. Bake for 45 minutes or until potatoes are tender. Cut into wedges and serve.
