  • 3 baking potatoes, peeled and cubed
  • 1 tablespoon butter
  • 13 ounces smoked sausage, cooked and chopped
  • 2 tablespoons vegetable oil
  • 1 small red bell pepper, diced
  • 1 medium onion, diced
  • 1 garlic clove, pressed
  • 3/4 teaspoon salt, divided
  • 6 large eggs
  • 1/4 teaspoon pepper

Preheat oven to 350F. Place cubed potatoes in a large bowl and add cold water and let sit for 5 minutes. Then, drain and pat dry.
Meanwhile, over medium heat, melt butter with oil in a cast-iron skillet. Add bell pepper and onion, and sauté for about 3 to 5 minutes. Then, add garlic and sauté for 1 minute. Add to mixture the cubed potatoes and sausage and stir in and 1/2 tsp. salt. Cook and be sure to stir often for 10 minutes.
Remove mixture from heat. While still hot and to fit in sunny side egg, quickly make 6 indentations in potato mixture, using back of a spoon. Break 1 egg into each indentation. Sprinkle eggs with pepper and salt.
Place pan in oven for 10- 12 minutes or until eggs are set. Serve immediately.
