  • 2 lb. potatoes, boiled
  • 1 egg
  • 1/2 tsp. salt
  • 3/4 C. all-purpose flour
  • 1 Tbs. olive oil
  • 1 onion, chopped
  • 1/4 lb. steak, shredded
  • 1/2 C. butter, melted
  • Salt and pepper to taste

Drain potatoes. Place potatoes in a large bowl and mix egg, salt and flour until thick. Knead dough for 5 minutes. Let it rest for 30 minutes. In a large saucepan, heat olive oil over high heat. Add onion and steak. Season with salt and pepper to taste. Brown steak over medium heat. Remove from heat and let mixture cool.

Roll paste dough out on pasta machine in very thin pieces. Cut out 3-inch squares from dough. Place a tablespoon of filling in the middle of each square. Top with another square. Press the edges together to seal.

Bring water to a boil and add 2 Tbs. salt. Cook ravioli in the boiling water for about 4 to 5 minutes. Drain and serve in bowl. Top with cheese.
