Potato Skin Snacks

These French fry-like snacks are baked instead of fried for a healthier treat. Great for a snack or appetizer.

  • 4 large baking potatoes
  • 4 Tbs. fat free or low Italian salad dressing
  • 4 tsp. Italian seasoning or other herb blend
  • Parmesan Cheese (optional)

Bake potatoes at 400 degrees for about an hour or until done. Cool. Cut potatoes in half lengthwise and scoop out the potato, leaving a 1/4 inch lining of potato in the shell.

Cut each potato shell half into 5-6 strips. Place strips skin side down on a baking sheet. Brush with the dressing and sprinkle with seasoning blend and cheese if you are using it. Broil 6 inches from heat for 5 minutes or until browned. Serve warm.
