Potato Soup
Ingredients
- 6 med. size potatoes sliced thin or diced (or use leftover mashed potatoes)
- 1 can evaporated skim milk
- 2 tsp. garlic powder
- 2 tsp. onion powder
- 1 med. onion diced
- 2 Tbs. butter
- Salt & pepper to taste
- 2 cans chicken brooth
- 2 cans water or enough to cover potatoes
Directions
Peel and dice or slice potatoes (or left over mashed potatoes) and place in pan with chicken brooth and enough water to cover. Cook until potatoes are done, then mash with hand masher. Then add milk and heat until nice and warm. If need to thicken I use corn starch in a little of the broth and heat until right thickness. Your preferance.
