Potato Spinach Casserole

This potato spinach casserole is good with any meat or fish dinner. This recipe can get your kids to eat spinach! Feel free to use real or instant potatoes.

Ingredients

  • 5 lg. potatoes, cooked to be mashed
  • salt and pepper
  • 1/4 C. butter (or more to your liking)
  • 3/4 C. sour cream
  • 1/2 C. milk
  • 1 10-oz. pkg. thawed frozen chopped spinach
  • 1/2 lg. pkg. Velveeta cheese, cubed
  • 1 8-oz. pkg. shredded cheddar cheese

Directions

Mash potatoes and season with salt, pepper and butter. Add all ingredients except shredded cheese. Put into lightly oiled 9x13-inch pan. Bake for 45 minutes at 350 degrees. Remove from oven and top with shredded cheese. Bake for 10 more minutes.
