Potato Spinach Casserole
Ingredients
- 5 lg. potatoes, cooked to be mashed
- salt and pepper
- 1/4 C. butter (or more to your liking)
- 3/4 C. sour cream
- 1/2 C. milk
- 1 10-oz. pkg. thawed frozen chopped spinach
- 1/2 lg. pkg. Velveeta cheese, cubed
- 1 8-oz. pkg. shredded cheddar cheese
Directions
Mash potatoes and season with salt, pepper and butter. Add all ingredients except shredded cheese. Put into lightly oiled 9x13-inch pan. Bake for 45 minutes at 350 degrees. Remove from oven and top with shredded cheese. Bake for 10 more minutes.
