  • 1½ cups mashes potatoes.
  • 1½ cup self-rising flour
  • 2½ tablespoons cold bacon fat, cubed
  • ¼ teaspoon salt
  • ¼ cup milk
  • 4 scallions, sliced

Preheat the oven to 400°F. Boil the potatoes, drain and mash. In a bowl, combine 2 tablespoons of bacon fat, flour and salt. Mix until pea-sized crumbs form and add the mashed potatoes and milk. Mix well until the batter is smooth. Roll out the dough on a floured surface and cut into squares, re-rolling any leftover dough and repeating the process. Bake on a baking sheet lined with parchment paper for 20 minutes, or until golden brown. When done, move to a rack to cool. Heat the rest of the bacon fat on medium heat and cook the bread for about 2 minutes on each side, or until warm and golden. Serve topped with scallions.
