Potato Wedge, Cucumber, and Tomato Appetizer
Serving Size / Yield
- 4 medium potatoes.
- 2 Tbs olive oil
- 1 Cucumber, sliced
- 1/3 C of Roma Tomatoes, sliced
Cut each potato lengthwise into eight wedges, coated in olive oil and place in large baking pans
Bake potatoes at 400° for up to 25 minutes, turning trays halfway.
Cut cucumbers and Roma tomatoes into thin portions. Arrange on plate, add potatoes on top, and serve.
