Treat yourself to a decadent dessert with these copycat brownie cookies. They're filled with tons of chocolate and are just like Potbelly's. But better, because you don't have to wait in line for them.

  • 1 lb. butter, softened
  • 3 C. dark brown sugar
  • 4 lg. eggs room temperature
  • 2 tsp. vanilla extract
  • 1 C. unsweetened cocoa
  • 3 C. all purpose flour
  • 2 tsp. baking soda
  • 2 tsp. salt
  • 1 C. semi-sweet chocolate chips

Preheat oven 350ºF degrees.

Combine dry ingredients except for cocoa in a small bowls, whisk lightly to mix ingredients well, set aside. In a large bowl beat butter, sugar sugar and eggs until fluffy. Slowly beat in cocoa, then the dry ingredient mixture.

Line cookie sheets with parchment paper, and spoon dough onto the sheets, place into oven and let bake for 20-25 minutes. Take sheets out and let cool before serving.
