  • Unbaked pastry for 1 pie crusts (For the top)
  • 1 lb. strawberries, sliced
  • 1 C. corn syrup
  • 1/2 C. water
  • 1 tsp. lemon juice
  • 2 Tbs. cornstarch
  • 8 mini graham cracker pie crusts
  • Powdered sugar

Slice strawberries thin, cutting off tops. In a large mixing bowl add water, corn syrup, lemon juice, and cornstarch. Take 1/2 C. strawberries and add them to the bowl and mash. Add the remaining strawberries and pour into crusts. Cut the pie crust so that it will fit the mini pies.  Then cover the mini pies with the crust.   Cut slits in the tops of all the crusts in order for the steam to escape. Crimp to seal pie crusts together. Bake for 30-40 minutes or until the top of the pie is golden brown. Allow to cool for 20 hours then serve. Top with powdered sugar and enjoy.
