This pressure cooker baked beans recipe is vegetarian-friendly. Just remember you have to let the beans soak overnight before cooking.

  • 2 C. navy beans
  • 1/4 cup vegetable oil
  • 1 Tbsp. salt
  • 1/2 tsp. dry mustard
  • 1/4 tsp. ground pepper
  • 1 onion, minced
  • 1/4 C. molasses
  • 1/3 C. brown sugar
  • 1/4 C. ketchup
  • 3 1/2 C. water
  • salt

  1. Place dry beans in cooker. Add cooking oil, salt, and water to cover beans and soak overnight.

  2. Drain the beans and add them along with the remaining ingredients except salt to cooker.

  3. Close lid. Place pressure regulator on vent pipe and cook 45 minutes with slow, steady flow of steam escaping from the pressure regulator.

  4. Let pressure drop on its own.

  5. Season to taste with salt.
