  • 6 medium red potatoes
  • 1 C. water
  • ½ onion, diced
  • 1 stalk celery, chopped
  • Salt and pepper to taste
  • 3 hard-boiled eggs, chopped
  • 1 T. dill
  • ½ C. mayonnaise
  • 1 tsp. yellow mustard
  • 1 tsp. apple cider vinegar

In your pressure cooker, add in potatoes and water. Cover and pressure cook on high for 5 minutes. Remove from heat and peel and chop potatoes when cool enough to handle. Layer potatoes in a bowl with onion and celery. Season with salt, pepper, and dill and top with eggs. In a separate bowl, whisk together mayonnaise, mustard, and apple cider vinegar; fold into potato mixture, cover, and refrigerate for a few hours before serving.
