This rice pudding is made in a pressure cooker. Cut the cook time in half with this light and wonderful dessert recipe.

  • 1/2 C. rice
  • 1 qt. milk
  • 1 C. granulated sugar
  • 2 Tbs. butter
  • 1 dash salt
  • 2 eggs
  • 1 tsp. vanilla extract
  • cinnamon

In a pressure cooker pot combine rice, milk, sugar, butter, and salt. Select sauté and bring to a boil, while storing consistently until the sugar dissolves. Cover and lock lid in place.  Select low pressure and let sit for 16 minutes.  Meanwhile, whisk the eggs and vanilla together until light and fluffy. After 16 minutes turn the pressure cooker off and wait 10 minutes.  Then use a quick pressure release.  Carefully remove the lid and stir the pot.  Add eggs to mixture slowly, stirring continuously.  Select sauté again and cook uncovered until the mixture starts to boil.  Turn off the pressure cooker and stir in any fruit.  Spoon into individual cups, or one large bowl and top with cinnamon. Serve with extra dollop of butter on top if desired.
