A light, beautiful, and healthy pasta salad that works well for outdoor BBQs with a great Italian flavor. Keeps fresh for several days if there is any left!

Ingredients

  • 1 lg. box rotini pasta (tri-colored if available), cooked al dente and drained
  • 1 lb. Genoa hard salami, sliced 1/4-in. thick to cut into chunks
  • 1lb. Provolone cheese, cut into chunks
  • 3 C. broccoli, chopped
  • 2 C. green onions, chopped
  • 1 C. cucumbers, chopped into small pieces
  • 2 C. green peppers, chopped
  • 4 chopped, seeded tomatoes or chopped, sun-dried tomatoes in oil (preferred)
  • 3-4 Tbs. Schilling salad supreme
  • 1 lg. bottle Zesty Italian salad dressing of choice
  • sprinkle with Parmesan cheese (optional)

Directions

Boil rotini noodles according to directions and drain with cool water. Add all the above ingredients to well-drained pasta, mix well, and refrigerate several hours before serving. Prior to serving, you may want to add a little more Italian dressing since the pasta will absorb the dressing a bit more than you want. Enjoy!
