  • One standing rib roast, bones tied back by the butcher
  • 1 Tbsp. sea salt
  • 1/2 Tbsp. Black pepper

Remove the roast from the fridge at least 3 hours before you cook it. Season with salt and pepper to taste. Preheat the oven to 500 degrees. Place the rib in a roasting pan and cook 15 minutes. Reduce the oven temperature to 325 degrees and cook another hour until the thermometer reads 120 degrees. Cut away the strings and let the meat rest for 10 minutes before slicing.
