Primi Piatti (Shrimp, Lemon, and Capers)

Easy, quick, and very tasty. Also very eye-appealing. Serve with crusty French bread.

Ingredients

  • 6 oz. linguine
  • 1 tsp. olive oil
  • 2 shallots, chopped
  • 2 garlic cloves, minced
  • 1 lb. raw shrimp, peeled
  • 1 jar of capers, drained
  • 3 Tbs. lemon juice
  • 1 tsp. red chili flakes
  • black pepper

Directions

Cook pasta according to directions. Next, saute oil, shallots, and garlic in large skillet till tender.  Add shrimp, capers, and lemon juice.  Continue to cook for about 5-6 minutes (until shrimp turns pink). Drain pasta and toss together with shrimp mixture, chili flakes, and pepper.
