Prosciutto and Onion Sauce

Ingredients
- 1/4 lb. prosciutto, slices very thin and finely chopped
- 1 sm. onion, chopped
- 2 sprigs parsley, minced
- 1 stalk celery, chopped
- 1 clove
- 1 bay leaf
- 1/2 garlic clove, chopped
- 1/8 tsp. salt
- 1/8 tsp. pepper
- 1 C. vinegar
- 1 C. stock
- 1 tsp. potato flour + 1 tsp. water
- 1 tsp. prepared mustard
- 2 Tbs. capers
- 2 Tbs. butter
Directions
Put prosciutto, onion, parsley, celery, clove, bay leaf, garlic, salt, pepper and vinegar in a saucepan. Cover and simmer until vinegar is reduced to 1/3 of the original amount. Heat stock in another pan, add potato flour and cook slowly. continue to stir until thick. Strain vinegar mixture and ass to stock. Add mustard and capers. Keep sauce warm, add butter and mix well.
