  • 4 eggs
  • 6 slices prosciutto
  • ½ diced onion
  • 1 tablespoon olive oil
  • 4 sliced tomatoes
  • 1 cup broccoli
  • 1 chopped handful basil
  • Salt and pepper

Heat the olive oil in a large pan over medium heat and add the onions and broccoli. After cooking for a few minutes, add the prosciutto. When the prosciutto begins to get crispy, add the tomato slices. Cook for 3-4 minutes. Use a wooden spoon to make four nests in the skillet and crack one egg into each cleared space. Cook until the eggs are set and sprinkle with basil and season with salt and pepper.
