  • 2 lb. Sliced Peaches
  • 1/4 C. brown sugar
  • 1/4 tsp. cinnamon
  • 2 T. run
  • 1 tsp. vanilla extract
  • 1 T. lemon juice
  • 2 T. flour
  • 1 premade pie crust
  • 1 T. cream
  • 2 T. sugar

In a large mixing bowl, toss the peach slices with the brown sugar, cinnamon, rum, vanilla, lemon juice, and flour. Roll out the pie crust into a large circle, then place on a baking sheet. Pour the peach mixture over the crust, making sure to get all the liquid onto the crust as well, and leaving a 2 inch rim along the side of the crust. Distribute the peaches to a thin layer, evenly over the crust. Fold the sides of the pie crust up and over the peaches, just long the sides, then brush the sides with the cream. Sprinkle the edges with sugar, then bake for 40 minutes at 400 degrees.
