  • 1 ¼ C. flour
  • 1 ¼ C. old fashioned oats
  • Dash salt
  • ½ tsp. baking soda
  • ½ C. + ¼ C. sugar
  • ½ C. + ¼ C. light brown sugar
  • 1 ½ sticks butter, melted
  • 1 tsp. + ½ tsp. vanilla extract
  • 2 tsp. cinnamon
  • ½ tsp. nutmeg
  • ½ tsp. ground cloves
  • 1 large egg
  • 1 large egg yolk
  • 2 (15 oz.) cans pureed pumpkin
  • 1/3 C. evaporated milk
  • 1 C. semisweet chocolate chips

Preheat oven to 350 degrees. In a large bowl, combine flour, oats, salt, baking soda, ½ cup of sugar, and ½ cup of brown sugar. Add in melted butter and 1 teaspoon of vanilla, stirring and combining well (the mixture will be thick). In a baking pan lined with parchment paper, press mixture into the bottom and form a crust; bake for 15 minutes. Set aside remaining crust mixture. In a separate bowl, whisk together the egg and egg yolk. Gradually add in ¼ cup of sugar, ¼ cup of brown sugar, ½ teaspoon of vanilla, and seasonings. Once well combined, mix in pumpkin and milk. Evenly spread pumpkin mixture over the cooled crust. Add your chocolate chips into the remaining crust mixture and give a quick stir to incorporate. Crumble this over pumpkin layer and bake for another 25 to 30 minutes. Let cool in refrigerator, slice, and serve with whipped cream.
