This rich and creamy soup is incredibly satisfying. Perfect dish to serve on Thanksgiving or any fall day.

Serving Size / Yield

6-8 servings

Ingredients

  • 1 lg. onion, sliced
  • 1/4 C. butter
  • 1/2 tsp. curry powder
  • 2 C. canned pumpkin
  • 2 C. cream
  • 1 1/2 tsp. salt

Directions

Saute onion in butter until wilted. Sprinkle with curry powder and cook a minute or two longer. Combine in a blender or food processor with pumpkin and process until mixed. Stir in cream and salt and continue to process. Pour into a large saucepan and add chicken stock. Heat slowly until very hot.
