Ingredients
- 2 C. all-purpose flour
- 2 tsp. cinnamon
- 1 tsp. baking soda
- 1/4 tsp. baking powder
- 1/2 tsp. salt
- 1 1/2 C. sugar
- 3/4 C. vegetable oil
- 3 eggs, Lg.
- 1 tsp. vanilla extract
- 3 C. fresh pumpkin, shredded
- 1 C. pumpkin seeds, toasted

Directions
Preheat the oven to 325 degrees F.
Mix the flour, cinnamon, baking soda, baking powder, and salt together.
In another bowl, combine the sugar, vegetable oil, eggs, and vanilla. Add together both mixtures and mix in the shredded pumpkin and pumpkin seeds. Pour it all into a non- stick loaf pan.
Bake for 1 H 15 MIN. Let cool for 10 minutes on a cooling rack.
