Pumpkin Bread

This pumpkin bread recipe is one of the easiest breakfast breads you can make! I learned this from an attendee at one of my Weight Watchers classes. It's simple, easy and low in calories!

Ingredients

  • 1 box spice cake mix
  • 1 15-oz. can pumpkin

Directions

Empty the cake mix and the pumpkin together. No other ingredients are needed. Place into a greased bread pan and bake for 35 minutes at 400 degrees or until a toothpick comes out clean when inserted into the middle of the loaf.

NOTE: I think this tastes better if stored in the refrigerator.

  • I haven't tried making this yet but HAVE tasted a pumpkin muffin at my Weight Watcher meeting using a very similar recipe. It's only ONE WW point per muffin (should make 24). However the WW group leader told us to add 3/4 cup of water to the cake mix and pumpkin. We were also told to bake the muffins at 350* for twenty minutes. If you don't have spice cake mix you can substitute carrot cake mix.
