Pumpkin Cake

Very rich and simple to make. Can be served with whipped or ice cream.

Ingredients

  • 3 eggs
  • 1 C. sugar
  • 1 tsp. cinnamon
  • 1 29-oz. can pumpkin
  • 1/2 tsp. ginger
  • 1/4 tsp. cloves
  • 1 14-oz. can evaporated milk
  • 1 18-oz. box white cake mix (yellow)
  • 1/2 C. butter, melted
  • 1 C. walnuts or pecans

Directions

Preheat oven to 350 degrees. In a bowl, mix first 7 ingredients until blended. Pour into greased 9x13-inch pan. Sprinkle 1 pkg. of cake mix over top. Drizzle melted butter over top. Sprinkle with chopped nuts. Bake at 350 degrees for 1 hour.
