  • 8 oz cream cheese
  • ½ c butter
  • ½ c canned pumpkin
  • 1 ½ c brown sugar
  • 2 c flour
  • ½ c graham cracker crumbs
  • 1 ½ tsp pumpkin pie spice
  • ½ tsp cinnamon

Preheat the oven to 350 degrees. Line two baking sheets with aluminum foil. Mix together cream cheese, pumpkin, and butter until creamy. Add in sugar and vanilla and mix well. Add in the dry ingredients (including the graham cracker crumbs, mixing until a dough forms.

Arrange spoonfuls of dough on the baking sheet. Press the dough balls flat and top with dollops of cream cheese. Top with more dough and press flat. Bake cookies for 18 minutes
