Ingredients

  • 2¼ cup all-purpose flour
  • 4 tbsp. granulated sugar
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 1 tsp pumpkin pie spice
  • ½ tsp salt
  • 1¼ cup milk
  • ¼ cup ricotta cheese
  • 3/4 cup pure pumpkin puree
  • 2 large eggs
  • 1/2 cup semi-sweet chocolate chips

Directions

In a large bowl, combine flour, sugar, baking powder, baking soda, pumpkin pie spice and salt.
In a smaller separate bowl, stir together milk, ricotta, pumpkin puree, and eggs.
Add wet ingredients to dry ingredients and stir until just combined. The batter should be a bit lumpy.
Gently fold chocolate chips into the batter with a wooden spoon and set aside.
Spray your griddle with cooking spray and heat on medium heat, then pour the batter onto the cooking surface, measuring ½ cup per pancake.
Cook for 1½ - 2 minutes until edges start to bubble, flip and cook the other side for about a minute until side is golden brown.
Remove from pan, and serve with butter and maple syrup!
