Pumpkin Cookies

My mom says this is a very moreish cookie - you can't eat just one. Ha! This cookie is very good with vanilla coffee.

Ingredients

  • 1 pouch Betty Crocker Sugar Cookie Mix
  • 1 large egg
  • 1/2 stick (4 Tbs.) butter, melted
  • 1/2 15 oz. can pumpkin (about 1 1/4 C.)

Directions

Preheat oven to between 350 degrees. Mix together melted butter, egg, and pumpkin. Add pouch of sugar cookie mix and stir with wooden spoon until well blended. Mix will not form a soft ball. Spoon onto ungreased cookie sheet about 1-1 1/2 inches apart. Bake for 12-15 minutes. Cool on cookie sheet about 1 minute. Place on wire rack and cool completely.

  • The worst cookies I ever baked & I could barely taste the pumpkin. A frosting is the only thing that would salvage this recipe but it's not worth it.
