Pumpkin Cream of Wheat

A great warm way to start the day. This recipe is like eating pumpkin pie for breakfast and it is fat free.

  • 1/4 C. canned pumpkin
  • 2 packets sugar substitute (i.e. Sweet 'n Low)
  • 1/4 tsp. ground cinnamon
  • Pinch of all spice or pumpkin pie spice
  • Pinch of salt
  • 1 1-oz. packet instant Cream of Wheat cereal
  • 2/3 C. boiling water

Combine the pumpkin, sugar substitute, cinnamon, all spice, and salt in a microwaveable bowl. Stir to mix. Microwave for about 30 seconds or until warm. In a serving bowl, stir together the Cream of Wheat and boiling water. Stir in the pumpkin mixture.
