  • 1 can pumpkin puree
  • ½ c granulated sugar
  • ½ c brown sugar
  • 5 egg yolks
  • 2 tsp vanilla extract
  • 1 tsp cinnamon
  • ¼ tsp allspice
  • ¼ tsp ground cloves
  • ¼ tsp slt
  • 3 c cream
  • 8 T brown sugar, for topping

First, preheat oven to 325 degrees. Mix pumpkin, granulated sugar, and brown sugar in a bowl. Mix in egg yolk, spices, and vanilla. In a saucepan, bring cream to a boil. Whisk in the hot cream to the pumpkin mixture.

Pour pumpkin and cream mixture into ramekins and place them into a roasting pan with enough water to come halfway up the side of the ramekins. Bake custards for 35 minutes, or until the centers are set. After baking, chill custards for six hours. After custards have set, top them with brown sugar. You can caramelize the tops of the custard with a kitchen torch, or you can caramelize them by broiling them in the oven.
