  • 1 can pumpkin
  • 1/2 C. all-purpose flour
  • 1/2 tsp. salt
  • 2 tsp. baking powder
  • 2 Tbs. granulated sugar
  • 1 tsp. ground cinnamon
  • 2 large eggs
  • Oil for frying

Pour pumpkin, flour, salt, baking powder, sugar and cinnamon into mixing bowl. Mix well. Add eggs and beat until mixed well. Heat oil in pan over medium-high heat. Scoop batter and drop small amounts on pan. Fry until golden and then flip to fry on other side.
