Pumpkin Ice Cream

A wonderful dessert to serve after a delicious Thanksgiving meal.

Ingredients

  • 1 C. canned or cooked pumpkin
  • 1/4 tsp. pumpkin pie spice
  • 1 qt. vanilla ice cream, softened

Directions

In a medium bowl, mix the pumpkin and pie spice until well blended.

Stir in ice cream. Freeze until ready to serve. Garnish with

gingersnaps.

Yield: 4-6 servings.
